Light Cakey Scones

什么都要吃

A couple of us gals enjoy cakey scones introduced by a ex-pastry chef  from Shenton Hotel. He used the butter-creaming method and added more egg in the batter to make a very soft dough. Scone rings are necessary for this recipe. I used muffins tin before but don't like the shape of them . Not prepared to store a dozen of the rings so I made some from thick aluminium foil, see pic below.

Ingredients List:
  • 165g plain flour
  • 10g corn flour
  • 20g sugar
  • 1 tbsp + 1/8 tsp baking powder
  • 1/4 tsp baking soda
  • 100g salted butter
  • 40g egg
  • 30g coconut cream
  • 30g milk or yogurt
  • 5g rum
  • 3/4 cup raisins soaked in rum overnight
