Basic yeast fermentation...In my post of Singapore Tua Pau, the 3 steps yeast fermentation is a complex one , suitable for keen non-beginners but new hands are likely to struggle with the long hours and their patience thin out too quickly. Some readers and youtube viewers wrote in of the waiting agony to see the final product, so I worked out a simplier technique which is only a one step fermentation from 3 hours to overnight in fridge. The technique is more teachable in workshop and draws more interest from participants. Liu sar filling is a hot fave today and we planning to run more workshops on this recipe.
