Every Singaporean Son... Ah Mat shared this recipe and so I decided to serve him his favourite before he started his 2 years of living hell in the infantry. As parent of an only son, anxiety set in...prayed to Almighty for his protection. Whatelse could I do ? Hide him ? Where on earth...some kampungs in Malaysia where fugitive Selamat thought so " U can't find me !". At the same time, I had to put up with this 20 years old guy who thought his world had come to an end for weeks. Today, he is happily undergoing the OCS training and grown many inches taller.

Forsaken
Back to smoothie, this is a best drink to make when your bunch of bananas are spotting all over andabout to crash on to the floor. Cut them into smaller pieces for easier blending. Try not to blend at high speed to minimize the smoothie being too "foamy" and you getting a "beardy" lip. Throw in some ice cubes if you like it freezing cold. Omit the rum and you can serve it as a morning energy boaster. To coat the glass edge, squeeze melted chocolate from ready to use bottles. Japanese wafer rolls are my fave. Comfort food...For anyone who grew up in Singapore, you'll know of this white noodles "mouse tail" being fed to you once you're off the milk bottle or partially. Mothers love serving this soupy noodle to their little ones as it is easily to digest and delicious, cooked in meat broth with vegetables and some small pieces of meat, and not forgetting the little fish balls.
As for the adults, you are likely to crave for a bowl when you are down with a flu or after many days of gluttony. This is my first blog video and I had gone far too lor sor, but new cooks would find it informative, so I'm not taking it down from the web. There are days I laughed to myself at the whole production of the video. Surprisingly, I do get some positive comments from viewers and that motivates me to improve on my production quality.


When I do have some spare time on hand, may learn how to make loh shi fun from rice flour and share with all.

When I had to serve an appetizer to 50 guests, I came up with this idea of combining a mexican cheese dip with my fave panfried minced beef . Cognac is often used in my Dad's cooking to replace chinese cooking wine. Coriander powder, cumin n chilli powder r widely used here as well. Served it w crunching nachos n u wouldn't want other dips.

As we r big fans of ham steak,n I usually would not like any sweet sauce on my main course plate.. so I like serving honey ham as an appetizer with an alcoholic pineapple sauce n top it w a slice of swiss cheese. My 2 teens still enjoy popping d bite size ham into their mouth in one go.

A quick and easy way of baking tartlets for Christmas. U can use any other fillings of yur choice. For those living in humid climate..dry your cookies in a warm oven for 15 mins. After baking, turn off the oven n leave the cookies in there with door half Open. I'm packing them up as Christmas gifts this year. U can use other coloured sugar for different occasions...lavender would be beautiful for teatime.

Hang loose: We get passionfruit all year round in this tropical region and is an ingredient I often use. With a mix of your favourite liqueurs, these tropical fruit juices can create a refreshing punch n get u going the night through. Have a great party !

Immaculate perfection
Mom's Tarts Best...The Chinese New Year is always being ushered in with rocketing fireworks(by government only), lions dances, reunion dinners. All brightly dressed, everyone gives love and blessings to each other. However, the celebration is incomplete without the indulgence of these petite pineapple tarts. Children besides, looking forward to receive red money packets (AngBao) during house visits, also like to compare whose Moms serve the most delicious pineapple tarts. 
i'm a fervent meat eater, dun throw me orange!

It is also at this festive period, the lady of the house entertains her guests with her beloved collection of tea cups and pot. The rest of the year, these pretty fragile porcelains are solely for the eyes appreciation and collecting dust in the display cabinet. The tea cups and pot are often the lady's dowry her mother passed on , or rather her family heirloom

Be gratefully thankful and appreciative when your tea is served in these fine crockery.. for the host trusts that you don't have clumsy buttery fingers. A friend once said she gets very nervous when she received such warm hospitality...the fear of dropping the cup and no replacement is available.

While shortbread is of Scottish origin and macarons that of French, these pineapple tarts are articulately shaped by The Straits settlers with assorted cutters and pipers and hence its origination proclaimed.

The making of pineapple tarts is sheer hard work and patience , what other better way of expressing a mother's love for her family and friends through her culinary skill?

2015 Update:
Bake 600 of these tarts this month as CNYgifts....a dozen per head.
who's taking me?
Arms and hands aching in silent from rolling jams and the piping of dough. Appointment with physiotherapy already booked ahead in anticipation of back and arms soreness.

This year CNY, I baked a small quantity crusty ones w a homemade jam that took 5 hours preparation time for 2.5kg pineapples. I am still happy with the ready-to-use packet jam.

This batch was shaped without a mould, the dough rolled into a small ball and made a dent with middle finger and decorated with a crimper .

Straits Chinese Pineapple Tarts 土生华人黄梨酥
Recipe (melt in mouth):
Dough -
  • 200g top flour
  • 20g corn flour
  • 20g icing sugar (sifted)
  • 2 yolks
  • 125g salted butter
  • 2 tbsp corn oil
Jam:
  • 300g prepared pineapple jam
  • 1 cup water
  • 1/2 inch cinnamon bark
  • 8 cloves
  • 1tsp lemon juice
  • 25g butter
  • 1/2 tbsp cognac/ rum each
